If you've ever wanted to try overnight oats...Try this one!
I've never been a big oatmeal eater but I've heard a lot about these "overnight oats". I was curious. I looked up a few recipes and was still skeptical but figured I might like them since you eat them cold instead of hot. Yep, you read that right. You eat them straight out of the refridgerator. I guess you could heat them up too but they are soooo good cold, why would you?
I found a great recipe and decided to tweak it a little bit to best suit me. Here it is.

Peanut Butter and Banana Overnight Oats
Makes 2 servings
Ingredients: 1 large ripe banana, mashed (about ½ cup) ¼ cup creamy peanut butter 1 cup rolled oats (Do not use quick cooking oats!) 1 cup unsweetened vanilla almond milk 1 tablespoon chia seeds (optional) ½ teaspoon vanilla extract ½ teaspoon ground cinnamon 1 teaspoon light agave or honey (You may use more if you like sweeter oatmeal.)
Optional Toppings: Sliced Bananas Drizzle of Agave, Maple Syrup or Honey Cinnamon Dark chocolate shavings or chips Coconut shavings
Instructions:
-In a medium bowl, mash your banana with a fork.
-Add the remaining ingredients to the bowl.
-Mix until well combined. (And I mean, well combined. That peanut butter may take a little extra elbo grase to smooth out.)
-Pour the mixture into two airtight containers. (Yes, you can just cover the mixing bowl tightly with plastic wrap. I prefer to refrigerate individual servings, but you do what you have to.)
-Refrigerate the oats for at least 3 hours or overnight.
-When ready to eat, give the oats a good stir.
-Add toppings of your choice and ENJOY!
